Crispy Pata ala Chef Ian Galza Recipe

The Iconic dish of Barrio Fiesta is Crispy Pata, crunchy pork skin with juicy collagen rich meat dipped into your spicy chopped shallots and garlic soy-calamansi dip. Fantastically goes well with cold beer or your steady hard liquor; brandy, rum or whiskey.  Here again is Chef Ian Dalida Galza’s take of this classic Pinoy dish. Cheers!

“CRISPY PATA” my style….

Ingredients:

Pata front
Salt
Pepper whole
Leeks
Tanglad
Whole bawang
1 onion
Knor pork cubes
Patis
Suka 2 tablespoon
Oil for frying

Pagsamasamahin lang ang lahat ng ingredients maliban sa mantika.
At pakuluan hanggang sa lumambot
Masmainam gumamit ng pressure cooker kung meron pakuluaan hanggang 45 to 1 hour.
Pag malambot na palamigin at ilagay muna sa freezer or para sa extra crispy crunchy na balat. Bago iprito lubog sa mantika at wisik wisikan ng kaunting tubig habang piniprito….
