Kapukan na Pato by Rufus Moneva

Pagnag-asawa ang sisig at kilawin pero pato ang gamit… ibang klase!

This is absolutely new for us. Its like a sisig recipe and kilawin in one but of all the meat in the world, its made of duck!

One of our most active members in Share Your Pulutan, Rufus Moneva, just shared again a new recipe he got from a friend in Nueva Ecija. Its simple to make and would go nicely with a hard liqour. Duck meat is red type meat, meaning it is rich in flavor and on the fatty side of things. Cutting such richness would be a treat for hard liquor lovers like brandy, rhum or even gin. Kapukan is a Luzon dish made from any meat (mostly goat meat) grilled, diced and finished into a kilawin, making it a close relative the South’s Sinuglaw. Try this dish for a change, mga kapuluts!
