This video is quite sad, the lobsters are not fresh anymore. It was pre-cooked to retain its meatiness. Just like crabs, lobsters losses meat mass when captivity and spoils easily when it dies. So in order to prolong its consumption date, cooks pre-cooked them through boiling or steam. The halved lobsters then gets reheated with a bed of garlic to dispel any foul fishy smell. Whatever they do with this lobster as long its still edible, it will always demand a hefty price. Cheers!
